Les Combrailles is La France profonde – real France, a vast plateau with deep cut valleys and gorges, dotted with rivers, lakes, waterfalls and small peaceful hamlets. This hilly region, at the foot of the Massif Centrale, has a chain of extinct volcanos dominated by the Puy de Dome, which was recently designated a UNESCO World Heritage site.. Here, the beautiful unspoilt views enhance the feeling of rest and quiet. After winding down with a drink and some lovely food, you could consider experiencing the Auvergne region by walking in this breathtaking landscape, and we can help with suggested routes. You could choose cycling, day trips in the car, golf, wild water canoeing, or climbing the Puy de Dôme. For a less strenuous day go to museums or one of the many medieval towns and their Chateaux Return in the late afternoon or evening to this place where you feel at home, a charming country house in an enchanting rural environment: Le Cuisinier en Combraille. (The Chef in the Combraille) Your room in our 100 years old home overlooks our beautiful flower-filled garden. It is stylishly decorated, incorporating authentic details from the original farming estate. Each day ends with your personalized gourmet evening menu cooked from fresh local ingredients, by Jacco, ‘Le cuisinier en Combraille’ himself. Experience the best that country living has to offer.

Le cuisinier en Combraille

Jacco and Cees (a Dutch couple) are the owners of Le cuisinier en Combraille. Starting in 2005, they made Le cuisinier into a haven of well-being in the middle of the hilly Combraille landscape. Jacco did the cookery school, secondary school and became a florist. Decorated among others the Amstel Hotel (Amsterdam) and Hotel des Indes (The Hague) and the Amsterdam Casino. Does not want to be called a professional cook, but always has been a passionate amateur chef. Jacco loves to cook for the guests and is always up for something new. The owner of Le Cuisinier en Combraille devises the menus, chooses the dishes taking the palate of tastes and the visual aspect as a starting point and ensures availability of the proper fresh ingredients. Cees is an engineer. After Technical College went to work in information technology (IBM), training and management. For Cees cooking was a late call. At home Jacco and Cees often prepare dishes together, but Cees likes to leave the creative cookery to Jacco. Cees´s tasks at Le Cuisinier en Combraille include cooking technology. publicity, entourage, etiquette and that there´s always plenty of wine to drink.

Accessibility

Apart from the Salers room (Comfort Twin room 2nd. floor), all our rooms are accessible trough the garden without staircases and with double entrance doors opening up to at least 90 cm. Please note: the bath rooms are not designed to be wheelchair friendly.

A car is recommended when staying at the property
  • Road from Clermont-ferrand (80.0 km)
    if you use Google Maps or Waze, you can enter "Le cuisinier en Combraille" and the app will show you the right route. (But don't take the dirt roads!) The hamlet of Vivier is accessible from the D103 road between Vergheas and Roche d'Agoux.
